Diabetic-Friendly Lactation Cookies

These cookies substitute Splenda and Truvia for table sugar – and dark chocolate instead of semi-sweet. The flax seed meal, brewer’s yeast, and oats help to support healthy lactation. Eat 1-3 cookies per day as a happy healthy supplement!

These can also be frozen into small dough balls, and taken out to bake a few at a time instead of baking one large batch.

Diabetic-Friendly Lactation Cookies

– 2 Tb flax seed meal – 1/4 cup water – 1 cup butter – 2/3 cup Splenda granulated – 2/3 cup Truvia brown sugar – 2 eggs – 1 tsp vanilla – 2 cups flour – 1/3 cup brewer’s yeast – 1 tsp cinnamon – 1 tsp baking soda – 1 tsp salt – 3 cups oats – 1 cup dark chocolate chunks

Mix flaxseed & water, let sit for 5 minutes. Beat butter & sugars. Add eggs & beat well. Add flaxseed mix and vanilla. Sift together flour, brewer’s yeast, baking soda and salt. Add dry ingredients to butter mix. Stir in oats and chocolate chunks. Chill dough for 30+ minutes. Scoop onto baking sheet – bake at 350* for 14 minutes.

These are so good. Thank you for sharing this for diabetic mommas. I added chia and used Lily’s chocolate & w sugar free vanilla syrup for less sugar too and it’s so good! Will be making another batch asap.
