These are both delicious and effective!! You can bake the entire batch, or freeze the dough for baking later. For added effectiveness, you can increase the amount of oatmeal and brewer’s yeast.
Oatmeal & Chocolate Chip Lactation Cookies
1 cup butter
1 cup sugar
1 cup brown sugar
1/4 cup water
2 Tbsp. flax seed meal
1 tspn vanilla
2 cups flour
1 tspn baking soda
1 tspn salt
1 tspn cinnamon
3 cups oats (whole oats – not ‘quick’ oats!!)
1/4 cup brewer’s yeast
1 cup chocolate chips
(optional - chopped dates)
Preheat the oven to 350.
Mix together flax seed meal and water, and let sit for 5 minutes.
Beat together the butter, sugars, and eggs.
Add the flax seed mix and vanilla.
Stir together the rest of the dry ingredients. Add dry ingredients to the butter mixture.
Mix in chocolate chips.
Scoop dough into spoonfuls onto a baking sheet.
Bake for 14 minutes.
Cool before serving.
(If freezing dough – scoop spoonfuls onto baking sheet and place in freezer. Once cold, transfer into a freezer bag. Dough will keep for several weeks frozen)
