This version of Spinach Artichoke Dip is made with Greek yogurt instead of cream cheese – so it’s much healthier, and a GREAT way to increase your protein intake!!
Greek Yogurt Spinach Artichoke Dip
1 Tbsp extra virgin olive oil
2 bags spinach leaves
1 can artichoke hearts (sliced)
1 lb container Greek yogurt
1 cup parmesan cheese
Garlic, salt, and pepper (to taste)
Wilt spinach and olive oil in a wok or large skillet over medium heat.
Reduce heat and add chopped artichoke hearts.
Remove from heat and add yogurt, cheese, and seasonings.
Refrigerate before serving.
Serve with chopped vegetables or whole grain bread.
